What do you do?
“Passionate about the culinary professions, my journey began in sewing before I turned to teaching in the hotel and catering sector within special education. For the past 17 years, I have been continuously training and developing my skills in the culinary field.
After graduating in hotel and restaurant management in 2011, I expanded my expertise over the years through training in bakery and pastry (degree obtained in 2020), artisanal ice cream, pizza, fresh pasta, bistronomy… and, more recently, chocolate and confectionery.
This latest training was a true turning point: in October 2024, I opened ‘Dolochoc’, my own artisanal chocolate workshop in Martouzin — a new adventure that I embrace with passion while continuing my work as a teacher.
Always curious and eager to learn, I am currently undertaking specialized training in the preparation of fish and shellfish, as well as low-temperature cooking.”
What motivated you to be awarded the "Famenne-Ardenne UNESCO Global Geopark" label?
“With Dolochoc, my artisanal workshop in Martouzin, I highlight Belgian products, local suppliers, and preservative-free production, all within a short supply chain.
I work exclusively on order to avoid waste and to maintain a responsible, well-thought-out production process.
My commitment aligns fully with the values of the Famenne-Ardenne Geopark: local expertise, sustainability, and respect for the terroir.”
Are you committed to sustainable development and eco-responsible practices?
“Waste sorting, solar panels for responsible energy, locally sourced and short-chain raw materials whenever possible, eco-friendly packaging, and thoughtful production to reduce waste.”
