What is it you do?
"Cheese maker and affineur based in Marche-en-Famenne, Wallonia, L’Atelier de la Fromagerie du Samson artisanally processes milk to offer you high-quality products, prioritising short supply chains and certified organic production.
We work with local producers of cow’s, goat’s and sheep’s milk to create homemade cheeses that truly express our terroir.
Our opening hours for private customers are Thursday and Friday from 10 a.m. to 6 p.m., and Saturday from 9 a.m. to 2 p.m.
A free guided tour of the workshops is organised on the first Saturday of each month at 10 a.m."
What prompted you to seek "Famenne-Ardenne UNESCO Global Geopark Partner" status?
"The Geopark’s approach is fully in line with that of the workshop, which highlights the region’s culinary heritage."
What is your approach to sustainable development and environment friendly practices?
"A sustainable approach thanks to unique ageing cellars built underground, reducing energy consumption.
Short supply chains and promotion of the Famenne region through the use of raw milk.
Photovoltaic panels (energy self-sufficiency of approximately 85%)."
