"Chef Cliff Vanhooren offers a refined Franco-Belgian cuisine, highlighting regional and seasonal products. The restaurant, open for lunch and dinner (except Mondays and Tuesdays, reserved for hotel guests), offers a lunch menu, a market menu, as well as a varied and flavorful à la carte. In the morning, a generous buffet is served with a view of the garden."
What prompted you to seek "Famenne-Ardenne UNESCO Global Geopark Partner" status?
"I am proud of my region and eager to share it with those who come to visit us. The Geopark is a great way to showcase our landscapes, our heritage, and our producers.
Through my work, I want to inspire guests to get out, explore the surroundings, and discover the treasures of the Famenne-Ardenne."
What is your approach to sustainable development and environment friendly practices?
Several concrete actions have been implemented within the restaurant:
Waste sorting and short supply chains: The products used in the kitchen mostly come from local suppliers. This approach supports the regional economy and reduces emissions related to transportation.
Purchase management: Shopping is done on a weekly basis to better control stock and limit food waste.
Reduction of packaging: For example, milk is delivered in reusable glass bottles, thus reducing the use of disposable containers.
Energy consumption: The restaurant kitchen closes every day at 8:30 PM, allowing significant energy savings while optimizing the organization of the service.
