What is it you do?
"In our restaurant, we concentrate on seasonal cuisine and fresh produce. We are located right on the village square in Tellin, the starting point for any number of walks and bike rides through the woods. We also have a south-facing terrace, ideal for sipping a beer or enjoying some of our other local products."
What prompted you to seek "Famenne-Ardenne UNESCO Global Geopark Partner" status?
"The restaurant is ideally situated between the Famenne and the Ardenne. We serve fresh, seasonal and local produce, of which fresh trout and game are perfect examples. We are happy to welcome groups of walkers and other visitors to this lovely region of ours."
What is your approach to sustainable development and environment friendly practices?
"All our heating runs on gas, as do the kitchens. Almost all the lighting uses LED bulbs. We work with local producers (of mushrooms, cheese, game, trout, etc.), following the rhythm of the changing seasons. We also play a part in village life, organising events such as dinners for Tellin's young people."
