What is it you do?
"Our restaurant practises what we like to call locally sourced "bistronomy". We offer diners a simple, unpretentious welcome in a traditional but fully renovated farmhouse, serving hearty , truly tasty food based on fresh local produce, in a warm, friendly setting."
What prompted you to seek "Famenne-Ardenne UNESCO Global Geopark Partner" status?
"We are both locals, we love this region and its environment, and we are immensely proud that it has won UNESCO recognition and status. In our business, the land - the terroir - and craft traditions are primordial.And since some of our suppliers and the people we work with are already Geopark partners, it seems perfectly logical to want to become a part of this splendid project."
What is your approach to sustainable development and environment friendly practices?
"In terms of energy use, we use mainly electricity to run the business, no heating oil, and gas just for the cooking ranges. Heating is provided by heat pumps. We are also strict about sorting our waste. When sourcing our ingredients, we work almost exclusively with local producers, some of them certified organic. One of several choices we have made is to source our meat solely from farmers who raise and butcher their own animals."
