What is it you do?
â€œIt was in 2002 that we first embarked on the adventure of creating our gastronomic restaurant, La Gloriette. February 2020 saw the opening of a 3-star HÃ´tel de Charme, â€œLa Glorietteâ€, just 1 km from the centre of Marche -n-Famenne. The restaurant, a former bourgeois town-house, decorated in a warm, contemporary style, also includes a terrace, garden and kitchen garden at the rear, through which we can share our love of nature with our guests. The 3-star hotel opposite, a residence built from local stone, has been fully renovated in an unaffected, natural style yet with every attention to comfort. The garden is a delight for the senses with its bright colours and the delicious fragrances given off by its wide variety of herbs and edible flowers.â€
What prompted you to seek "Famenne-Ardenne UNESCO Global Geopark Partner" status?
â€œWe wanted to play our part in a sustainable project that brings together local actors who share the same values. It also offers an opportunity to showcase fine dining and local products, with a respect for tradition, as a way of providing the best possible service to our future guests.â€
What is your approach to sustainable development and environment friendly practices?
â€œManyof the products featuring on our restaurant menus or in the hotel breakfasts are home-made, including our jams, bread and yogurts. Seasonal vegetables are sourced directly from the kitchen garden alongside the restaurant terrace. Our honey, too, is local and close to home, as I am a beekeeper and have my own hives at the bottom of the restaurant garden. Obviously, we make sure all our waste is properly sorted and we compost any leftover food. In the hotel, we have installed soap dispensers in all the guest bathrooms. All the products served at breakfast are locally sourced or even home-made. All this is explained to guests in individual brochures on each of the tables. The hotel is also â€œBienvenue vÃ©loâ€ (cyclists welcome) accredited, to encourage the development of soft mobility.â€
