What is it you do?
"La Papillote is a restaurant right in the centre of Wellin, a stone's throw from the main square. We serve refined cuisine based on local and artisanal products. Fish is one of our signature specialities. In season, we like to serve up trout from the Haute Lesse or game from our forests. We also offer a catering and home chef service."
What prompted you to seek "Famenne-Ardenne UNESCO Global Geopark Partner" status?
"The opportunity to introduce local products and craftspeople to visitors, but also to make new discoveries for ourselves. A partnership like this is a good way of showcasing what we do best. We want to present our local producers and encourage short supply chains."
What is your approach to sustainable development and environment friendly practices?
"We do everything we can to save energy; for one thing, we have installed LED bulbs in the restaurant. We pay special attention to waste sorting, and we compost, which significantly reduces the amount of food waste we put out for collection. In season, we work almost exclusively with our own garden vegetables. In terms of suppliers, we prefer to work with local artisans and producers, and rely on short supply chains."
